I have to admit, I have been away from “Blog-Land” way too long and I missed it so! I have been busy with my new business venture {Wedding Planner} and I must say, ” I LOVE MY JOB!” its the best being your own boss!! I realize (now that I’ve got the hang of things, new job, new husband, and so on) I have to prioritize. Meaning: managing my time better. I was finding that I was getting too tired at the end of the day to do some of the things I love most… My Blog being one of them. I’m officially back in the saddle and must say it feels great! It’s hard to get TRULY organized. Its nice to have my little web log here in cyber space, its such a great outlet for me in so many ways!!

One of my most favorite things to do is cooking/baking, another is, EATING! I discovered this scrumptious, mouth-watering recipe from Sunday Suppers, pop over to their blog to get the instructions. Yummy!
My recipe for today is a sure fire winner for any entertaining in your near future! It is pico de gallo. There are a lot of recipes out there, but ours IS the best. Your work pals and dinner guests will want to know this recipe.
We like it spicy, so of course do EVERYTHING to taste.
(6) tomatoes {make sure to remove all the seeds, to get rid of the bitter taste}
Cilantro (most of a bundle)
(2) limes (squeeze all the juice out)
(2) tbsp. Olive Oil
(1) tbsp. Sea salt {we do-to taste}
(3) Fresh Serrano peppers {these are the spicy ones, so if you don’t want too spicy, use (1)}
(1) Fresh jalapeno {again, use to your spicy-mouth-o-meter}
(1) Red onion {sometimes we use a white, its not so potent, tastes just as good}
Chop it all up, sprinkle the salt and olive oil over the top, squeeze the lime juice in and stir. We use the yellow corn tortilla chips, you choose your favorite. Eat with a margarita or cold beverage of your choice.
I woke up this morning and wanted to bake! I LOVE cooking so much! I found this fabulous recipe; Salted caramel-chocolate cupcake – all cravings covered with this little devil! YUM! These would make a great treat for a bridal shower!
Ingredients
1/2 cup butter, softened
1/2 (8-oz.)
1 1/4 cups sugar
3/4 cup firmly packed dark brown sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (8-oz.) container sour cream
8 ounces chopped semisweet chocolate
1/4 cup whipping cream
2 tablespoons whipping cream
salted caramel butter-cream
Garnishes: sea salt flakes and caramels, cut into quarters
Preparation
Preheat oven to 350 degrees. Beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in sugars until creamy. Beat in sugars until light and fluffy. Add eggs, 1 at a time, beating until blended after each addition. Stir in vanilla.
Combine flour and next 3 ingredients. Gradually add to butter mixture alternately with sour cream, beating until blended. Spoon batter by rounded tablespoonfuls into lightly greased miniature muffin pans.
Bake at 350 for 13 to 15 minutes or until a wooden pick inserted in centers comes out clean. Cool in pans on wire racks 5 minutes. Remove from pans to wire racks, and cool completely ( about 30 minutes).
Microwave semisweet chocolate and 1/4 cup whipping cream in a microwave-safe bowl at HIGH 1 minute, stirring at 30-second intervals. Whisk in 2Tbsp. whipping cream until smooth. Dip tops of cupcakes in chocolate mixture, and let stand until chocolate is set (about 30 minutes). Pipe or spread salted caramel butter-cream onto cupcakes. Garnish, if desired.
Note: To prepare regular-size cupcakes, spoon batter into 2 lightly greased 12-cup muffin pans, filling two-thirds full. Bake at 350 for 22 to 24 minutes or until a wooden pick inserted in centers comes out clean. Cool and decorate as desired. Makes 2 dozen.

It was so gorgeous out today! I love it when the sun is shining, everyone is in such a great mood! I found a scrumptious heart healthy meal for you and your guests for you dinner party! Grilled chicken with Pineapple strawberry salsa! Is your mouth watering? Mine was, when I found the recipe.
Grilled pineapple and fresh mint and strawberries combine with tangy lemon and a bit of hot pepper flakes to make an interesting salsa for grilled chicken. {yum! wiping the drool of my face} Serves 4; 3 ounces chicken and 1/2 cup salsa per serving {of course adjust if there are more people}.
INGREDIENTS
1 teaspoon canola or corn oil
Salsa
2 slices fresh pineapple, each 1/2 inch thick, patted dry
1 cup whole strawberries (about 5 ounces), diced
1/4 cup finely chopped red onion
3 to 4 tablespoons chopped fresh mint leaves
1 to 2 teaspoons sugar
1/8 teaspoon crushed red pepper flakes
1 medium lemon
CHICKEN
4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
2 teaspoons salt-free steak seasoning blend
1/2 teaspoon salt
DIRECTIONS
Preheat the grill on medium high. Brush a grill pan or grill rack with the oil. Heat the grill pan or rack on the grill for about 2 minutes, or until hot. Grill the pineapple for 2 minutes on each side. Transfer to a cutting board and let cool slightly, about 2 minutes, before chopping.
Meanwhile, in a medium bowl, stir together the remaining salsa ingredients except the lemon. Grate 1 teaspoon lemon zest, reserving the lemon. Stir the zest and chopped pineapple into the strawberry mixture. Set aside.
Sprinkle both sides of the chicken with the seasoning blend and salt. Grill for 5 minutes on each side, or until no longer pink in the center. Transfer to plates.Squeeze the reserved lemon over the chicken. Serve with salsa on the side. AND steam some yummy asparagus.
